ALLISON IS A BORN FIGHTER.

In college, she chose to study Engineering, because many of the boys chose it. She was not boy crazy but simply wanted to challenge herself to beat a status quo. After all, the college Freshman excelled at defeating adversities.

DEFEAT IT SHE DID.

Even with a full social calendar that included participating in service organizations and intercollegiate sports, Allison graduated summa cum laude, and was hired by a prestigious organization.

For many years, Allison thrived at work.

THEN, A MORE DIFFICULT CHALLENGE SURFACED.

One that robbed Allison’s confidence: her weight.

In her late thirties now, after having multiple kids and still working full-time; Allison lost focus on living healthy and started poor habits like eating junk food and neglecting physical fitness. Extra weight creeped on and confidence slipped away.

Once a bright and energetic woman, Allison now slumps around blurry-eyed, barely able to keep afloat.

SHE IS STILL A FIGHTER THOUGH.

As Allison observed girlfriends, also with kids and working demanding jobs, shed weight and appeared happy and healthy; she began to wonder what she had missed.

“Eat clean,” advised one of her friends, “and make time for exercise.”

EASIER SAID THAN DONE.

But Allison was determined, and began a collection of easy and healthy meals that taste good and require little prep time, including today’s VEGGIE-TOPPED FRENCH TOAST.

“The recipe is wonderful because it is quick and easy, and can be eaten as breakfast or lunch,” said Allison,”plus, who can resist avocado?”

The weight loss took only a few months. But more importantly, she has her confidence back too, and is again a bright and energetic woman.

VEGGIE-TOPPED FRENCH TOAST

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

VEGGIE-TOPPED FRENCH TOAST

Ingredients

  • 1 piece of whole wheat bread
  • 1 egg
  • 2 table spoons of all-natural cheddar, grated or shredded
  • 1 table spoon of diced red onion
  • 1/2 cups of grape tomatoes, halved
  • 1/2 avocado, peeled, de-cored and thinly-sliced
  • 1/2 table spoons of real butter

Instructions

  1. Over stove top, on medium-high heat, add tomato and onion to frying pan, and sauté until vegetables are thoroughly cooked. Turn off heat. Transfer cooked contents to a small bowl, and set aside.
  2. In a mixing bowl, add egg and grated cheese, and beat.
  3. Cut bread in half. Dip both sides in the egg batter.
  4. Over stove top, on medium heat, add butter to another frying pan, and let it melt. Tip pan in various directions to evenly spread butter to cover as much surface as possible.
  5. Add bread and cook both sides, as you would any French toast. When toast is thoroughly cooked, transfer to a serving plate.
  6. Top the toast with avocado slices and sautéed vegetables.
  7. Enjoy!
