Clean Eating Recipe – Tomato and Green Onion Scrambled Eggs

Ingredients

  • 2 cage-free eggs
  • 1/4 cup of green onion, chopped
  • 1/4 cup of tomatoes, chopped
  • 1/2 tea spoon of light, all-natural, non-GMO soy sauce
  • 1 pinch of sea salt
  • 1 dash of freshly ground black pepper
  • 1/2 tea spoon of real butter or extra virgin olive oil

Instructions

  1. Crack eggs in mixing bowl. Whisk heavily.
  2. Heat frying pan on high. Add oil or butter.
  3. When oil or butter melts, add green onion and tomatoes. Add soy sauce.
  4. Stir fry for about 1 minute.
  5. Turn heat to med-high. Add eggs.
  6. Add sea salt and black pepper.
  7. Scramble for 1 minute.
  8. Done.

Notes

Enjoy with fresh fruits and whole wheat toast for breakfast, or organic brown rice for lunch or dinner.
