Clean Eating Recipe – Garlic Spinach Egg Drop Soup

Ingredients:

– 3 cups of baby spinach

– 1 table spoon of minced garlic

– 1/4 cup of green onion, diced

– 1 cup of water

– 2 eggs, or 4 egg whites, beaten

– 1 tea spoon of organic sesame oil

– 1 table spoon of extra virgin olive oil

– 1 pinch of sea salt

– 1 pinch of white pepper powder

– 1 tea spoon of naturally brewed light soy sauce

Directions:

1. Heat pot on high. Add olive oil.

2. When oil becomes hot, add green onion and garlic. Mix a bit and let cook for about 30 seconds.

3. Add spinach leaves, sea salt, pepper powder and soy sauce. Mix well.

4. Reduce heat to medium, and let spinach cook for about 30 seconds.

5. Add water. Stir. Turn heat back on high.

6. When water is boiling, slowly stir in beaten eggs (or egg whites).

7. Let cook for another 30 seconds.

8. Pour soup into a serving bowl, and drizzle sesame oil on top.

Clean Eating Recipe – Garlic Spinach Egg Drop Soup

Ingredients

  • 1 table spoon of minced garlic
  • 5-6 cups of organic spinach leaves
  • 1 all-natural chicken breast, sliced
  • 1 tea spoon of all-natural light soy sauce
  • 1 tea spoon of vegetable oyster sauce
  • 1 table spoon of cooking wine
  • 1 tea spoon of corn starch
  • 2 table spoons of extra virgin olive oil, divided

Instructions

  1. Add chicken slices, corn starch, soy sauce, oyster sauce and cooking wine into a mixing bowl, and mix well.
  2. Heat wok on high. Add oil.
  3. In 30 seconds or so, oil becomes hot. Add marinaded chicken, and cook (stir a lot) until chicken's done. Turn heat off, and set chicken aside.
  4. Heat another wok on high. Add the other table spoon of olive oil.
  5. When oil becomes hot, add garlic, and let cook for 30 seconds.
  6. Add spinach. Stir for about 1 min.
  7. Add a pinch of sea salt and white pepper powder. Stir well.
  8. Add cooked chicken, and stir for about another minute.
