Clean Eating Recipe – Egg Cucumber Dill Boat

Ingredients

  • 2 hard boiled eggs, chopped
  • 1 pinch of dill weed
  • 1/2 tea spoon of sea salt
  • 1 table spoon of real mayo made with olive oil
  • 1/2 tea spoon of paprika
  • 1/2 cucumber, peeled, de-cored and cut into 1-inch boats

Instructions

  1. In a mixing bowl, add chopped eggs, sea salt, paprika, mayo and dill weed.
  2. Mix well.
  3. Stuff each cucumber boat with egg mix.
  4. Enjoy as snack.
