  • 1/2 cup of cucumber, peeled and sliced
  • 1/4 cup of green onions, diced
  • 1 table spoon of minced garlic
  • Two 1/2 table spoon of extra virgin olive oil - separated, one for scrambled egg, one for salad
  • 1 dash of sea salt
  • 1/2 tea spoon of dark vinegar
  • 1 egg


  1. Heat frying pan on high. Add the first 1/2 table spoon of olive oil.
  2. When oil gets warm, add egg and a pinch of sea salt.
  3. Scramble egg. Set aside when it's done.
  4. Heat frying pan on high again. Add the other 1/2 table spoon of olive oil.
  5. When oil gets warm, add green onion and garlic.
  6. Cook until onion and garlic become a little brown on the outside.
  7. Turn heat off.
  8. In mixing bowl, combine sliced cucumber, scrambled egg, sea salt, vinegar, and green onion and garlic in oil.
  9. Mix well and serve.
