Clean Eating Recipe: Chicken, Zucchini and Parmesan Melt

Ingredients

  • 3 cups of sliced zucchini
  • 2 cups of cooked organic chicken breast, sliced
  • 1 tea spoon of garlic powder
  • 1 tea spoon of onion powder
  • 1 table spoons of extra virgin olive oil
  • Olive oil cooking spray
  • 1 pinch of sea salt
  • 1 pinch of fresh ground black pepper
  • 1 pinch of dry thyme
  • 1 pinch of dry basil
  • 1/4 cup of freshly grated Parmesan cheese

Instructions

  1. Preheat oven at 350 F.
  2. Meanwhile, grease baking pan with olive oil cooking spray.
  3. Heat frying pan on high over stove top, and add one table spoon of olive oil.
  4. Add garlic and onion powder, mix with spatula, reduce heat to med-high and add zucchini slices.
  5. Add sea salt, pepper, thyme and basil, and stir for three minutes.
  6. Reduce heat to medium, and cook for another five minutes, while stirring occasionally.
  7. Add one to two table spoons of water, stir slightly, and let simmer for about two more minutes, stirring occasionally.
  8. Stir in chicken and cook for another two minutes.
  9. Transfer content into the greased baking pan. Evenly spread Parmesan on top.
  10. Bake for 5 minutes, or until cheese is melted.
