Clean Eating Recipe – Chicken Cucumber Dill Salad

Ingredients

  • 1 cup of cooked all-natural chicken breast, chopped
  • 1/2 cup of cucumber, chopped
  • 1/2 table spoon of dill
  • 2 table spoons of Greek yogurt dressing (I used Opa brand, but Bolthouse Ranch is also a great choice.)
  • 1/4 cup of green onions, diced
  • 1 table spoon of extra virgin olive oil

Instructions

  1. Heat frying pan on high. Add olive oil.
  2. When oil gets hot (takes about 1 min), add green onions.
  3. Cook green onions for about 1-2 min, or until they are golden on the outside.
  4. Turn heat down, and set aside.
  5. In a mixing bowl, add chicken, cucumber, dill and Greek yogurt dressing.
  6. Add green onion in oil.
  7. Mix well. Enjoy.
