Clean Eating Recipe – Baked Apple with Blue Cheese, Date and Pistachios

Ingredients

  • 1 apple, sliced
  • 1/4 cup of pistachios, crushed
  • 2 table spoons of blue cheese crumbs
  • 2 medjool dates, diced

Instructions

  1. Preheat oven 350 F.
  2. Grease baking sheet with organic coconut oil.
  3. Lay apple slices on baking sheet.
  4. Mix blue cheese, pistachios and dates.
  5. Top each apple slice with a spoonful of cheese mix.
  6. Bake for 5 minutes.

I thoroughly enjoyed this snack. The sweetness of dates and the biting taste of blue cheese fused together well. I also enjoyed crunchy apple slices and soft cheese. The pistachios also added a healthy crunchiness.
