Clean Eating Recipe: Avocado Parm Chicken with Balsamic Tomatoes

Ingredients

  • For Chicken:
  • 2 4-ounce of organic chicken breast, sliced into thin pieces
  • 1 table spoon of mirin
  • Extra virgin olive oil cooking spray
  • 1 tea spoon of ginger powder
  • 1 pinch of Garlic salt
  • 1 pinch of white pepper powder
  • 1 tea spoon of corn starch
  • 1 tea spoon of lite gluten-free soy sauce
  • 1 avocado, peeled, de-cored and diced
  • 2 table spoons of organic shredded Parmesan cheese
  • For Topping:
  • 2 cups of grape tomatoes, cut into halves
  • 11/2 table spoons of organic extra virgin olive oil
  • 2 table spoons of organic balsamic vinegar
  • 1 dash of dry Italian Seasoning
  • 5-6 pieces of fresh basil leaves, chopped

Instructions

  1. Turn oven on to broil.
  2. In a mixing bowl, add chicken, mirin, garlic salt, white pepper powder, ground ginger, soy sauce, and corn starch. Mix well.
  3. Place chicken pieces on broiling rack, and broil on high for 5 minutes. Turn chicken pieces over, and broil for another 5 minutes.
  4. While broiling, mash avocado in new mixing bowl. Add shredded Parmesan cheese and mix. Set aside.
  5. Over stove top, heat frying pan on high. Add olive oil and pour in Italian seasoning. Heat oil for 30 seconds.
  6. Add tomato into frying pan, and stir for around 20 seconds.
  7. Reduce heat to medium, add balsamic vinegar, and stir for another 2 minutes. Turn off heat. Transfer tomatoes to a bowl, and set aside.
  8. When chicken is fully cooked on both sides, remove pieces from oven, and place each piece onto a plate. Add a spoon of avocado and Parmesan mix on top of each piece of chicken.
  9. Top chicken with tomatoes and chopped basil leaves.
  10. Enjoy!
