Clean Eating Lunch: Pepper Jack Cheese Sandwich

Clean Eating Lunch: Pepper Jack Cheese Sandwich

Ingredients

  • 2 slices of whole wheat bread
  • 5 - 6 slices of all natural baked or rotisserie chicken breast meat (about 4 ounces)
  • 2 slices of all natural pepper jack cheese
  • 1 table spoon of raw honey
  • 1 table spoon of organic dijon mustard
  • 2 - 3 slices of garden tomatoes
  • 1/2 table spoon of real salted butter

Instructions

  1. Heat frying pan on high over stove top. Add butter.
  2. When butter melts, spread it out, and place both pieces of bread in pan.
  3. Reduce heat to medium, and let bread toast.
  4. Meanwhile, mix honey and mustard in a small bowl. Whisk well.
  5. Transfer bread onto serving plate. Place chicken slices in pan and place both pepper jack cheese on chicken.
  6. Heat until cheese slices are melted. Transfer chicken onto one piece of bread.
  7. Top with tomato.
  8. Spread honey and mustard mix on the other piece of bread.
  9. Close to make sandwich.
  10. Enjoy!
